Golden pan-fried flatbreads stuffed with spinach, potato and herbs — soft, stuffed and gone in minutes, fully vegan

These vegan stuffed flatbreads fry up golden on a dry griddle, with a warm spinach-potato-herb filling tucked inside every one. Soft bread, savory center, zero fuss.

The dough takes 5 minutes and the filling uses what's already in your kitchen. Stack them on a board and watch them disappear.

Why you'll love these stuffed flatbreads

  • Golden outside, savory stuffed center
  • Dry-griddled — no oil bath, no oven
  • 5-minute dough, simple pantry filling
  • Handheld, lunchbox-ready, freezer-friendly
  • Fully vegan, endlessly re-fillable
  • The stack-on-a-board moment from the photo

Health notes

  • Spinach: Iron, folate, vitamin K — cooked down so a lot fits inside.
  • Potato: Potassium and satisfying body for the filling.
  • Whole herbs: Parsley and scallions bring freshness and antioxidants.
  • Dry-griddled: Golden surfaces with almost no added oil.
  • Yogurt in the dough: Plant yogurt keeps the bread tender without eggs.

Key element — cool the filling before you stuff

Hot, steamy filling melts through raw dough and bursts the seams in the pan. Let it cool to room temperature, squeeze out any liquid, and the flatbreads seal cleanly and fry golden.

Ingredients

Instructions

  1. Make the dough. Mix the flour, salt and baking powder. Stir in the yogurt, olive oil and enough warm water to form a soft dough. Knead 3 minutes, cover, and rest 20 minutes.
  2. Cook the filling. While the dough rests, combine the mashed potato, squeezed spinach, scallions, parsley, garlic, cumin, salt and pepper. Mix well — it should be thick, not wet.
  3. Cool it down. Let the filling cool to room temperature. Hot filling bursts seams — cooled filling seals. This step is the recipe.
  4. Stuff and seal. Divide the dough into 8 balls. Roll each into a 6-inch circle, place 2 tablespoons of filling in the center, fold the edges up and pinch firmly closed. Flatten gently with your palm.
  5. Roll gently. Roll each stuffed ball lightly into a 7-inch round — gentle pressure keeps the filling inside. A dusting of flour stops sticking.
  6. Griddle golden. Heat a dry griddle or large pan over medium heat — like the one in the photo. Cook 2–3 minutes per side until golden spots appear and the bread puffs slightly. Stack on a wooden board and serve warm.

Notes & Tips

  1. Cool filling, sealed edges — no bursts in the pan.
  2. Squeeze the spinach dry; wet filling steams the dough apart.
  3. Roll gently from the center out; don't force it.
  4. Dry griddle, medium heat: golden spots, not scorched ones.
  5. Brush with garlic oil after cooking for the café finish.

Variations & serving ideas

  • Cheesy: ½ cup vegan mozzarella shreds folded into the filling.
  • Lentil: Cooked spiced lentils replace the potato — heartier, more protein.
  • Gluten-free: A 1:1 GF flour blend + ½ tsp xanthan gum; roll gently.
  • Spicy: Chili flakes or a minced green chili in the filling.
  • Cheesy spinach: Vegan mozzarella melts through the spinach — pull-apart center.
  • Spiced lentil: Curried lentils in place of potato — heartier and protein-rich.
  • Mushroom herb: Finely chopped mushrooms cooked dry with thyme — deep and savory.
  • Pizza-style: Tomato paste, vegan cheese and oregano inside — flatbread meets calzone.

Storage

  • Refrigerator: Up to 3 days (Reheat on a dry griddle 1–2 minutes per side)
  • Freezer: Up to 2 months (Freeze cooked flatbreads; reheat from frozen on the griddle)
  • Make ahead: Morning-of (Make the filling and dough; stuff and cook at serving time)
