  • 12 oz (340 g) fresh green beans, trimmed and cut
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (15 oz) red kidney beans, drained and rinsed
  • ⅓ cup chopped parsley
  • ¼ small red onion, finely chopped (optional)
  • ¼ cup extra-virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 1 garlic clove, minced
  • ½ teaspoon dried oregano
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • Pinch of chili flakes

Instructions 👩‍🍳

  1. Boil the green beans 3–4 minutes, until bright and just tender. Drain and drop them into ice water. Pat dry.
  2. Add the green beans, chickpeas, and kidney beans to a bowl with the parsley and onion.
  3. Whisk the olive oil, lemon juice, garlic, oregano, salt, pepper, and chili flakes.
  4. Pour the dressing over the beans and toss.
  5. Taste and add more lemon if needed. Serve now or chill 20 minutes so the beans take on the dressing.
