  • Kosher salt to taste

Instructions

  1. Brown the ground beef in a large pot over medium-high heat, breaking it up with a spoon, about 6–7 minutes. Drain excess fat if needed.
  2. Add the onion, carrots, and celery. Cook for 5 minutes, until the vegetables begin to soften. Stir in the garlic and tomato paste and cook for 1 minute.
  3. Sprinkle the flour over the mixture and cook, stirring constantly, for 1 minute.
  4. Gradually whisk in the beef broth. Add the potatoes, Worcestershire sauce, thyme, and black pepper. Bring to a gentle simmer.
  5. Cover and cook for 12–15 minutes, until the potatoes are tender.
  6. Stir in the peas and milk. Simmer for 2–3 minutes, until the peas are heated through. Do not boil hard after adding the milk.
  7. Taste and season with salt. For a thicker soup, mash a few potato pieces against the side of the pot.
  8. Ladle into bowls and finish with fresh parsley and extra black pepper. Serve hot.
