  • No boxed mix, no sugar
  • It stays scoopable if you use allulose, not erythritol alone

Health notes

  • Protein: Modest. This is a dessert scoop, not a protein shake.
  • Lower carb than regular ice cream: Allulose instead of sugar. Close to keto at 5g net.
  • Six scoops: Macros are per scoop, not the cup.
  • Sugar chocolate or honey will jump the carbs. Use sugar-free chunks.

Key element — whip the cream, fold chunks last

A thin mix freezes icy. Whip cream to soft peaks, fold in the sweetened vanilla base, then fold chocolate chunks and freeze-dried berry bits so the scoops look like the photo.

Ingredients

Instructions

  1. Base. Whisk almond milk, allulose, vanilla, salt, and egg yolk if using until the sweetener dissolves.
  2. Whip. Beat cold cream to soft peaks.
  3. Fold. Fold the vanilla base into the cream. Fold in chocolate chunks and crushed freeze-dried berries.
  4. Freeze. Spread in a loaf pan. Cover. Freeze at least 4 hours.
  5. Scoop. Rest 5 minutes at room temp. Scoop into a cup, like the photo. One sixth is one serving.

Notes & Tips

  1. Allulose keeps the scoop softer than erythritol.
  2. Chop the chocolate small so every scoop gets chunks.
  3. Freeze-dried berries give the pink specks without extra juice.
  4. If it freezes rock hard, rest 8 to 10 minutes before scooping.
  5. An ice cream maker works: churn 15 to 20 minutes, then freeze 1 hour.

Variations & serving ideas

  • Monk fruit blend: Use a 1:1 allulose mix. Straight erythritol can freeze hard.
  • No egg yolk: Skip it. The scoop is a little less rich.
  • Sugar chocolate: Skip it. That is how carbs jump.
  • Plain vanilla: Skip the chocolate and berries.
  • Mint chip: Add 1/4 tsp peppermint extract and skip the berries.
  • Coffee: Stir 1 tsp instant espresso into the base.
  • Ice cream maker: Churn the mix 15 to 20 minutes, fold chunks in last, freeze 1 hour.

Storage

  • Freezer: Up to 2 weeks (Press parchment on the surface)
  • Scoop: After 5 minutes rest (Longer if it froze hard)
  • Refrigerator: Skip (It melts)
