Low carb • Sugar-free dark seeded bread — 35 minutes, six slices

This is low-carb dark seeded bread, not rye from a bakery. Almond flour, cocoa, flax, and sesame bake into a dark mug loaf that slices into seeded rounds, like the photo. Thirty-five minutes. No sugar, no wheat flour.

Six slices. Cool before you cut so the crumb stays together.

Bake: 25

Slices: 6

Why you’ll love this bread

  • 6g protein per slice — almond flour, flax, and egg
  • 2g net carbs — cocoa for color, not rye flour
  • About 35 minutes, one large mug
  • Dark crumb, sesame dome, thin slices, like the photo
  • No boxed mix, no sugar
  • It slices clean if you cool 10 minutes

Health notes

  • Protein: Almond flour, flax, and egg carry the slice.
  • Lower carb than rye bread: No wheat. Close to keto at 2g net.
  • Six slices: Macros are per slice, not the mug.
  • Rye flour or molasses will jump the carbs. Cocoa is only for color.

Key element — dark batter, seeded dome

A pale loaf skipped the cocoa. Mix a thick almond-flax batter, fill a large mug two-thirds, top with sesame, and bake until the dome is set, like the photo.

Ingredients

Instructions

  1. Heat. Heat oven to 350 F (175 C). Grease a large oven-safe mug.
  2. Dry. Whisk almond flour, flax, cocoa, baking powder, and salt.
  3. Wet. Stir in egg, almond milk, oil, and vinegar until thick.
  4. Fill. Spoon into the mug two-thirds full. Sprinkle sesame seeds on top, like the photo.
  5. Bake. Bake 22 to 26 minutes until the dome is set. Cool 10 minutes. Slice 6 rounds. One slice is one serving.

Notes & Tips

  1. Use a large mug. A small mug overflows.
  2. Cocoa is for color. It does not make the bread taste like cake.
  3. Vinegar helps the rise. Do not skip it.
  4. Cool 10 minutes or the first slices crumble.
  5. Toast a slice and serve with guacamole, like the photo.

Variations & serving ideas

  • Mini loaf pan: Bake 22 to 26 minutes.
  • Everything seasoning: Swap sesame on top.
  • Wheat flour, rye flour, or molasses: Skip them. That is how carbs jump.
  • Caraway: Add 1/2 tsp caraway seeds to the batter.
  • Mini loaf: Bake in a greased mini loaf pan 22 to 26 minutes.
  • Two mugs: Double the batter and bake two mugs side by side.
  • Microwave: Cook one mug 90 seconds, then 20-second bursts until set. Texture is softer.

Storage

  • Room temp: 1 day (Covered)
  • Refrigerator: Up to 4 days (Toast before serving)
  • Freezer: Up to 1 month (Slice first)

Frequently asked questions

Is this bread keto-friendly?

Yes. About 2g net per slice with almond flour and flax.

Why is it pale?

The cocoa was skipped. One tablespoon darkens the crumb without turning it into cake.

Can I use rye flour?

Rye adds carbs. Stay with almond flour so each slice stays at about 2g net.

Why bake in a mug?

The mug makes the seeded dome in the photo. A mini loaf pan works too.

Does it taste like chocolate?

No. The cocoa is only for color. The flavor is closer to dark seeded bread.

How do I store leftovers?

Room temp 1 day, fridge 4 days, or freeze slices 1 month. Toast before serving.
