Ingredients (makes 4–6 servings)
Cheesecake Filling:
- 8 oz full-fat cream cheese, softened
- ½ cup powdered erythritol or monk fruit sweetener (adjust to taste)
- 1 tsp vanilla extract
- 1 cup heavy whipping cream (cold)
Berry Layer:
- 2 cups mixed fresh berries (strawberries, raspberries, blackberries, blueberries) – roughly chopped if large
- 1–2 tbsp erythritol (optional, if berries are tart)
Topping:
- ½ cup heavy whipping cream, whipped to stiff peaks
- Extra fresh berries and a maraschino cherry or fresh cherry on top (optional)
Instructions
- In a large bowl, beat the softened cream cheese, powdered sweetener, and vanilla extract until smooth and creamy.
- In a separate chilled bowl, whip 1 cup heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until fully combined and fluffy. Taste and adjust sweetness if needed.
- If desired, lightly toss the mixed berries with 1–2 tbsp sweetener.
- In clear cups or small bowls, layer the cheesecake filling and berries: start with a spoonful of cheesecake mixture, add berries, then repeat until the cup is full.
- Top each serving with a generous dollop of freshly whipped cream.
- Garnish with extra berries and a cherry on top.
- Refrigerate for at least 30 minutes (or up to 4 hours) to let the flavors meld before serving.
Storage Tips
Store in the refrigerator, covered, for up to 3 days. The whipped cream topping is best added right before serving. Not ideal for freezing due to the fresh berries and cream.
