  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 medium carrot, finely diced (optional — adds sweetness, but still low-carb)

Broth + Creaminess

  • 4 cups chicken or beef broth
  • 1 cup heavy cream or half & half
  • 1 cup shredded cheddar cheese
  • 2 tbsp cream cheese (optional, makes it ultra silky)

Seasonings

  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • ½ tsp dried oregano
  • Optional: a pinch of red pepper flakes
  • Fresh parsley for garnish

👨‍🍳 Instructions

1️⃣ Brown the Beef

In a large pot, cook the ground beef over medium heat until browned.
Drain excess fat if needed (keep some for flavor!).


2️⃣ Sauté the Veggies

Add onions, garlic, and carrots.
Cook 3–4 minutes until softened.


3️⃣ Add Cauliflower & Broth

Stir in the cauliflower and pour in the broth.
Simmer 12–15 minutes, or until the cauliflower is tender.


4️⃣ Make It Creamy

Reduce heat to low.
Stir in heavy cream, cheddar cheese, and cream cheese.
Mix until melted and smooth.


5️⃣ Season to Perfection

Add salt, pepper, paprika, oregano, and optional chili flakes.
Simmer another 5 minutes to thicken.


6️⃣ Serve

Ladle into bowls and top with fresh parsley and more cracked black pepper.
