Light & Airy Cloud Cake
Light & Airy Cloud Cake
A magically fluffy, melt-in-your-mouth dessert for only 2 SmartPoints
If you’ve ever wished a dessert could taste like a cross between a soufflé, a cheesecake, and a cloud… this Light & Airy Cloud Cake is your dream come true.
Beautifully golden on the outside, feather-soft on the inside, and layered with silky cream — it looks decadently indulgent but stays shockingly low in SmartPoints.
The moment you slice into it, you’ll see that signature “cloud texture”: tall, airy, and bouncy, with a lightly sweet flavor that pairs perfectly with fresh berries and a dusting of powdered sweetener. It’s the kind of dessert that feels bakery-fancy but is secretly simple enough for any weeknight.

🛒 Ingredients
For the Cloud Cake Base
- 4 large eggs, separated
- ½ cup fat-free Greek yogurt
- 2 tbsp zero-point sweetener (like monk fruit or stevia)
- 1 tsp vanilla extract
- 2 tbsp cornstarch (or arrowroot)
- 1 tsp lemon juice (helps stabilize the meringue)
For the Light Cream Layer
- 1 cup fat-free Greek yogurt
- 2 tbsp sugar-free vanilla pudding mix
- 1–2 tbsp zero-point sweetener
Optional Toppings
- Fresh berries
- Light whipped topping
- Dusting of powdered sweetener
👩🍳 Directions
1. Make the Cloud Batter
Whip egg whites with lemon juice until stiff peaks form. In another bowl, whisk egg yolks, yogurt, sweetener, vanilla, and cornstarch. Gently fold the whites into the yolk mixture in three additions to keep the batter airy.
2. Bake It Low & Slow
Pour into a lined round cake pan.
Bake at 300°F (150°C) for 45–55 minutes, until puffed and golden.
Turn off the oven and let the cake sit inside 10 minutes to prevent collapse.
3. Prepare the Cream Filling
Mix yogurt, pudding mix, and sweetener until thick and silky.
4. Assemble the Cloud Cake
Let the cake cool fully.
Slice horizontally and spread the cream between the layers.
Top with whipped cream and berries.
5. Serve & Enjoy
Chill for 30 minutes for the best texture — then slice into pure, airy bliss.
💡 Tips for the Perfect Cloud Texture
- Don’t over-mix when folding eggs; this keeps it tall and fluffy.
- Use a water bath if you want an ultra-smooth, cheesecake-like finish.
- Chill before slicing for cleaner, bakery-style layers.
