Instructions

  1. Toss the broccoli and carrots with olive oil, salt, and pepper. Air fry at 200°C (400°F) for 10–12 minutes, shaking once, until charred at the edges. Set aside and keep warm. (Cook the fish after, or use a second batch.)
  2. Pat the fish fillets completely dry. Season with half the salt and pepper.
  3. Set up three shallow dishes: flour in one; beaten egg in the second; panko mixed with Parmesan, paprika, garlic powder, oregano, and remaining salt and pepper in the third.
  4. Dredge each fillet in flour, dip in egg, then press firmly into the panko mixture until well coated.
  5. Spray the air fryer basket with olive oil spray. Arrange fillets in a single layer without touching. Spray the tops generously.
  6. Air fry at 200°C (400°F) for 10–13 minutes, flipping carefully halfway and spraying again, until deep golden and the fish flakes easily.
  7. Serve immediately with the roasted vegetables, lemon wedges, and a sprinkle of parsley.

Notes & Tips

  1. Dry fish is crispy fish. Pat the fillets thoroughly before breading.
  2. Spray generously with oil. The panko needs it to turn golden instead of pale and dusty.
  3. Don't overcrowd the basket. Air needs to circulate for the crust to crisp.
  4. Flip gently with a fish spatula halfway. The coating is delicate before it sets.
  5. Check doneness by flaking: the fish should be opaque and separate into moist flakes.

  9. Fridge: store leftovers in an airtight container up to 2 days.
  10. Reheat: air fry at 190°C for 4–5 minutes to re-crisp. The microwave makes the crust soggy.
  11. Freezer: freeze breaded uncooked fillets up to 1 month. Air fry from frozen, adding 4–5 minutes.
  12. Best eaten straight from the basket while the crust crackles.
  13. The Secret to Air-Fryer Fish That Tastes Fried
  14. The secret is oil spray plus patience. Panko breadcrumbs are pale and dry by nature — without a coating of oil they come out looking dusty, not fried. Spraying the breaded fillets generously, top and bottom, gives the hot circulating air something to brown, and that produces the deep golden crust. The second half of the trick is space: a single uncrowded layer lets moisture escape instead of steaming the coating soft.

Variations & serving ideas

  • Lemon wedges
  • 1 tbsp fresh parsley, chopped
  • Different fish: haddock, basa, or salmon fillets all work — adjust time for thickness.
  • Gluten-free: use gluten-free panko or crushed cornflakes.
  • Low carb: swap panko for almond flour mixed with Parmesan.
  • Spicy: add 1/2 tsp cayenne to the coating.
  • Oven method: bake at 220°C on a wire rack for 15–18 minutes.

Frequently asked questions

Why did my coating fall off?

The fish was wet, or the fillets were flipped too early. Pat dry, press the coating on firmly, and let the first side set for at least 5 minutes before turning.

How do I know the fish is cooked?

It flakes easily with a fork and is opaque all the way through. An instant-read thermometer should read 63°C (145°F).

Can I skip the egg?

Yes. Brush the fillets with a thin layer of mayo or mustard instead — both help the coating stick and add flavor.
