Ingredients (Makes 12 muffins)

  • 1½ cups (150g) almond flour
  • ⅓ cup (35g) vanilla whey protein powder
  • ⅓ cup allulose or monk fruit sweetener
  • 2 tsp baking powder
  • ½ tsp cinnamon
  • ¼ tsp salt
  • 2 large eggs
  • ¾ cup (180ml) Fairlife 30g protein milk (or any high-protein milk)
  • 3 tbsp butter or coconut oil, melted
  • 1 tsp vanilla extract
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk almond flour, protein powder, sweetener, baking powder, cinnamon, and salt.
  3. Add eggs, protein milk, melted butter, and vanilla. Stir until just combined.
  4. Gently fold in the blueberries.
  5. Divide batter evenly among the muffin cups.
  6. Bake for 18–22 minutes until golden and a toothpick comes out clean.
  7. Cool in the tin for 5 minutes, then transfer to a wire rack.
