Ingredients (Serves 8)

  • 2 lbs ground beef or turkey
  • 1 packet low-carb taco seasoning (or 2 tbsp homemade)
  • ½ cup salsa (sugar-free)
  • 8–10 low-carb tortillas (or omit for ultra-low carb)
  • 8 oz (225g) cream cheese, softened
  • 1 cup sour cream or Greek yogurt
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1 cup shredded mozzarella
  • Toppings: 2 diced tomatoes, ½ cup sliced black olives, ¼ cup chopped green onions, extra cheese

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Brown ground beef in a large skillet. Drain fat, then stir in taco seasoning and salsa. Simmer 3–5 minutes. Set aside.
  3. Mix cream cheese and sour cream until smooth. Set aside.
  4. Layer in the baking dish: low-carb tortillas (or meat directly), half the meat mixture, cream cheese layer, half the shredded cheese. Repeat layers, finishing with cheese on top.
  5. Bake 20–25 minutes until hot and bubbly.
  6. Remove from oven and immediately top with diced tomatoes, black olives, green onions, and extra cheese.
