Ingredients (Serves 8)
- 2 lbs ground beef or turkey
- 1 packet low-carb taco seasoning (or 2 tbsp homemade)
- ½ cup salsa (sugar-free)
- 8–10 low-carb tortillas (or omit for ultra-low carb)
- 8 oz (225g) cream cheese, softened
- 1 cup sour cream or Greek yogurt
- 2 cups shredded cheddar or Mexican blend cheese
- 1 cup shredded mozzarella
- Toppings: 2 diced tomatoes, ½ cup sliced black olives, ¼ cup chopped green onions, extra cheese
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Brown ground beef in a large skillet. Drain fat, then stir in taco seasoning and salsa. Simmer 3–5 minutes. Set aside.
- Mix cream cheese and sour cream until smooth. Set aside.
- Layer in the baking dish: low-carb tortillas (or meat directly), half the meat mixture, cream cheese layer, half the shredded cheese. Repeat layers, finishing with cheese on top.
- Bake 20–25 minutes until hot and bubbly.
- Remove from oven and immediately top with diced tomatoes, black olives, green onions, and extra cheese.
