Ingredients (Serves 6)

  • 2 lbs (900g) ground beef
  • 1 packet sugar-free taco seasoning
  • 1 (10 oz) can diced tomatoes with green chiles (drained)
  • 4 cups shredded cheddar or Mexican blend cheese
  • 1 cup sliced black olives
  • 2 tomatoes, diced
  • ½ cup sliced green onions
  • Optional: sour cream, avocado, jalapeños for serving

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Brown ground beef in a large skillet. Drain fat and stir in taco seasoning and diced tomatoes. Cook 5 minutes.
  3. In a 9×13 baking dish, layer half the beef mixture, then half the cheese. Repeat layers.
  4. Bake 15–20 minutes until cheese is bubbly and golden.
