Ingredients (Serves 6)
- 2 lbs (900g) ground beef
- 1 packet sugar-free taco seasoning
- 1 (10 oz) can diced tomatoes with green chiles (drained)
- 4 cups shredded cheddar or Mexican blend cheese
- 1 cup sliced black olives
- 2 tomatoes, diced
- ½ cup sliced green onions
- Fresh cilantro and jalapeños for topping
- Optional: sour cream for serving
Instructions
- Preheat oven to 375°F (190°C).
- Brown ground beef. Drain fat and stir in taco seasoning and diced tomatoes. Cook 5 minutes.
- In a 9×13 baking dish, layer half the beef mixture, then half the cheese. Repeat layers.
- Bake 15–20 minutes until cheese is bubbly.
- Top with diced tomatoes, black olives, green onions, cilantro, and jalapeños. Serve hot.
