Ingredients (Serves 6)

  • 2 lbs (900g) ground beef
  • 1 packet sugar-free taco seasoning
  • 1 (10 oz) can diced tomatoes with green chiles (drained)
  • 4 cups shredded cheddar or Mexican blend cheese
  • 1 cup sliced black olives
  • 2 tomatoes, diced
  • ½ cup sliced green onions
  • Fresh cilantro and jalapeños for topping
  • Optional: sour cream for serving

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Brown ground beef. Drain fat and stir in taco seasoning and diced tomatoes. Cook 5 minutes.
  3. In a 9×13 baking dish, layer half the beef mixture, then half the cheese. Repeat layers.
  4. Bake 15–20 minutes until cheese is bubbly.
  5. Top with diced tomatoes, black olives, green onions, cilantro, and jalapeños. Serve hot.
