  1. Heat the oven to 375°F (190°C). Lightly grease a 9x13 glass baking dish.
  2. Heat the oil in a wide skillet over medium-high. Add the beef and onion. Break the meat into small crumbles and cook 6 to 8 minutes until browned, not grey. Drain extra fat if the pan is swimming.
  3. Stir in garlic and taco seasoning for 30 seconds. Add water or broth and the salsa. Simmer 2 to 3 minutes until the meat is coated and most of the liquid is gone. Taste for salt.
  4. Spread the beef in an even layer in the glass dish. Press it down lightly so the slice later looks like the photo.
  5. Stir Greek yogurt, sour cream, garlic powder, salt, and lime juice in a small bowl. Spoon it over the hot beef and spread it almost to the edges.
  6. Sprinkle cheddar and the white cheese over the cream layer.
  7. Bake 12 to 15 minutes, until the cheese is melted and the edges are bubbling.
  8. Rest 5 minutes. Top with shredded lettuce, diced tomato, black olives, jalapeño slices, and cilantro. Scoop a square so the beef layer shows.

  2. A wide skillet browns meat. A crowded pot steams it grey.
  3. Keep lettuce and tomato off until serving. They are the color on the pan.

Variations & serving ideas

  • Pepper jack: swap half the cheddar if you want more heat.
