Ingredients (Makes 9–12 squares)

  • 10 oz (280g) frozen spinach, thawed and squeezed dry
  • 8 large eggs
  • 8 oz (225g) cream cheese or cottage cheese, softened
  • 1½ cups (150g) shredded mozzarella or cheddar cheese
  • ½ cup (50g) grated parmesan cheese
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • Optional: pinch of nutmeg or red pepper flakes

Instructions

  1. Preheat oven to 375°F (190°C). Grease or line an 8×8 or 9×9-inch baking pan with parchment.
  2. In a large bowl, beat eggs and cream cheese until smooth.
  3. Stir in spinach, mozzarella, parmesan, garlic powder, onion powder, salt, pepper, and any optional seasonings.
  4. Pour mixture into the prepared pan and spread evenly.
  5. Bake for 35–45 minutes until golden on top and set in the center.
  6. Cool for 10 minutes before slicing into squares.
