Ingredients (Makes 9–12 squares)
- 10 oz (280g) frozen spinach, thawed and squeezed dry
- 8 large eggs
- 8 oz (225g) cream cheese or cottage cheese, softened
- 1½ cups (150g) shredded mozzarella or cheddar cheese
- ½ cup (50g) grated parmesan cheese
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt
- ¼ tsp black pepper
- Optional: pinch of nutmeg or red pepper flakes
Instructions
- Preheat oven to 375°F (190°C). Grease or line an 8×8 or 9×9-inch baking pan with parchment.
- In a large bowl, beat eggs and cream cheese until smooth.
- Stir in spinach, mozzarella, parmesan, garlic powder, onion powder, salt, pepper, and any optional seasonings.
- Pour mixture into the prepared pan and spread evenly.
- Bake for 35–45 minutes until golden on top and set in the center.
- Cool for 10 minutes before slicing into squares.
