Ingredients (Serves 4–6)

  • 2 lbs boneless chicken thighs or breasts
  • 2 tbsp butter or olive oil
  • 4–5 garlic cloves, minced
  • 1 small onion, diced
  • 2 medium carrots, sliced
  • 4 cups chicken broth
  • 1 cup heavy whipping cream
  • 4 oz (115g) cream cheese, softened
  • ½ cup grated Parmesan cheese
  • 1 tsp dried thyme or Italian seasoning
  • ½ tsp red pepper flakes (optional)

Instructions

  1. Heat butter in a large pot over medium heat. Season chicken with salt and pepper, then sear until lightly browned (4–5 minutes per side). Remove and set aside.
  2. In the same pot, sauté onion, carrots, and garlic for 3–4 minutes until softened.
  3. Return chicken to the pot. Add chicken broth, thyme, and red pepper flakes. Simmer for 15–20 minutes until chicken is cooked through.
  4. Remove chicken, shred with two forks, and return to the pot.
