Ingredients (Serves 4–6)
- 2 lbs boneless chicken thighs or breasts
- 2 tbsp butter or olive oil
- 4–5 garlic cloves, minced
- 1 small onion, diced
- 2 medium carrots, sliced
- 4 cups chicken broth
- 1 cup heavy whipping cream
- 4 oz (115g) cream cheese, softened
- ½ cup grated Parmesan cheese
- 1 tsp dried thyme or Italian seasoning
- ½ tsp red pepper flakes (optional)
- Salt & black pepper to taste
- Fresh thyme or parsley for garnish
Instructions
- Heat butter in a large pot over medium heat. Season chicken with salt and pepper, then sear until lightly browned (4–5 minutes per side). Remove and set aside.
- In the same pot, sauté onion, carrots, and garlic for 3–4 minutes until softened.
- Return chicken to the pot. Add chicken broth, thyme, and red pepper flakes. Simmer for 15–20 minutes until chicken is cooked through.
- Remove chicken, shred with two forks, and return to the pot.
- Stir in heavy cream, cream cheese, and Parmesan. Simmer gently until the soup thickens and cheese melts (5 minutes). Adjust seasoning.
- Garnish with fresh herbs and serve hot.
