Ingredients (Serves 4)

  • 2 lbs (900g) ground beef
  • 4 medium zucchini, sliced into half-moons
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 2 tbsp taco seasoning (sugar-free)
  • 1 cup (240ml) salsa (low-carb)
  • 1 cup (100g) shredded cheddar or Mexican blend cheese
  • 2 tbsp olive oil or butter
  • Salt and pepper to taste
  • Fresh cilantro, avocado, or jalapeños for topping

Instructions

  1. Heat oil in a large skillet over medium-high heat. Add ground beef and onion, cooking until beef is browned. Drain excess fat if needed.
  2. Add garlic and taco seasoning. Cook 1 minute until fragrant.
  3. Stir in salsa and zucchini slices. Cover and cook 5–8 minutes until zucchini is tender but not mushy.
  4. Sprinkle cheese on top, cover, and let melt for 2 minutes.
  5. Remove from heat and garnish with fresh cilantro and desired toppings.
