Ingredients (Serves 4)
- 2 lbs (900g) ground beef
- 4 medium zucchini, sliced into half-moons
- 1 small onion, diced
- 3 garlic cloves, minced
- 2 tbsp taco seasoning (sugar-free)
- 1 cup (240ml) salsa (low-carb)
- 1 cup (100g) shredded cheddar or Mexican blend cheese
- 2 tbsp olive oil or butter
- Salt and pepper to taste
- Fresh cilantro, avocado, or jalapeños for topping
Instructions
- Heat oil in a large skillet over medium-high heat. Add ground beef and onion, cooking until beef is browned. Drain excess fat if needed.
- Add garlic and taco seasoning. Cook 1 minute until fragrant.
- Stir in salsa and zucchini slices. Cover and cook 5–8 minutes until zucchini is tender but not mushy.
- Sprinkle cheese on top, cover, and let melt for 2 minutes.
- Remove from heat and garnish with fresh cilantro and desired toppings.
