Ingredients (Serves 6)

  • 2 lbs (900g) ground beef
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 2 tbsp taco seasoning (sugar-free)
  • 1 cup (240ml) salsa (sugar-free, low-carb)
  • 8 oz (225g) cream cheese, softened
  • 2 cups (200g) shredded cheddar or Mexican blend cheese (divided)
  • 1 cup sour cream or Greek yogurt
  • 1 cup sliced black olives
  • 1 cup diced tomatoes
  • ½ cup sliced jalapeños
  • Fresh cilantro and avocado for topping

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a large skillet, cook ground beef with onion until browned. Drain excess fat.
  3. Add garlic, taco seasoning, and salsa. Simmer 3–5 minutes.
  4. Stir in cream cheese and 1 cup shredded cheese until melted and smooth. Stir in sour cream.
  5. Transfer mixture to the baking dish. Top with remaining cheese.
  6. Bake 15–20 minutes until bubbly and cheese is melted.
  7. Remove from oven and top with olives, tomatoes, jalapeños, cilantro, and avocado.
