Ingredients (Serves 6)
- 2 lbs (900g) ground beef
- 1 small onion, diced
- 3 garlic cloves, minced
- 2 tbsp taco seasoning (sugar-free)
- 1 cup (240ml) salsa (sugar-free, low-carb)
- 8 oz (225g) cream cheese, softened
- 2 cups (200g) shredded cheddar or Mexican blend cheese (divided)
- 1 cup sour cream or Greek yogurt
- 1 cup sliced black olives
- 1 cup diced tomatoes
- ½ cup sliced jalapeños
- Fresh cilantro and avocado for topping
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- In a large skillet, cook ground beef with onion until browned. Drain excess fat.
- Add garlic, taco seasoning, and salsa. Simmer 3–5 minutes.
- Stir in cream cheese and 1 cup shredded cheese until melted and smooth. Stir in sour cream.
- Transfer mixture to the baking dish. Top with remaining cheese.
- Bake 15–20 minutes until bubbly and cheese is melted.
- Remove from oven and top with olives, tomatoes, jalapeños, cilantro, and avocado.
