Ingredients (Makes 1 loaf / 12 slices)
- 2 cups (200g) almond flour
- ⅓ cup (35g) vanilla whey protein powder
- ⅓ cup allulose or monk fruit sweetener
- 2 tsp baking powder
- ½ tsp cinnamon
- ¼ tsp salt
- 3 large eggs
- ⅓ cup (75g) butter or coconut oil, melted
- ½ cup (120ml) unsweetened almond milk
- 1 tsp vanilla extract
- ¾ cup (90g) chopped pecans + extra for topping
Glaze:
- ⅓ cup powdered allulose or monk fruit sweetener
- 2–3 tbsp heavy cream or almond milk
- ½ tsp vanilla extract
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C). Grease or line a loaf pan with parchment paper.
- In a large bowl, whisk almond flour, protein powder, sweetener, baking powder, cinnamon, and salt.
- Add eggs, melted butter, almond milk, and vanilla. Mix until smooth.
- Fold in chopped pecans.
- Pour batter into the prepared pan and sprinkle extra pecans on top.
- Bake for 40–50 minutes until golden and a toothpick comes out clean.
- Cool in the pan for 15 minutes, then transfer to a wire rack.
- For glaze: Whisk powdered sweetener, heavy cream, vanilla, and salt until smooth and pourable. Drizzle over cooled bread.
