Ingredients (Makes 1 loaf / 12 slices)

  • 2 cups (200g) almond flour
  • ⅓ cup (35g) vanilla whey protein powder
  • ⅓ cup allulose or monk fruit sweetener
  • 2 tsp baking powder
  • ½ tsp cinnamon
  • ¼ tsp salt
  • 3 large eggs
  • ⅓ cup (75g) butter or coconut oil, melted
  • ½ cup (120ml) unsweetened almond milk
  • 1 tsp vanilla extract
  • ¾ cup (90g) chopped pecans + extra for topping

Glaze:

  • ⅓ cup powdered allulose or monk fruit sweetener
  • 2–3 tbsp heavy cream or almond milk
  • ½ tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a loaf pan with parchment paper.
  2. In a large bowl, whisk almond flour, protein powder, sweetener, baking powder, cinnamon, and salt.
  3. Add eggs, melted butter, almond milk, and vanilla. Mix until smooth.
  4. Fold in chopped pecans.
  5. Pour batter into the prepared pan and sprinkle extra pecans on top.
  6. Bake for 40–50 minutes until golden and a toothpick comes out clean.
  7. Cool in the pan for 15 minutes, then transfer to a wire rack.
  8. For glaze: Whisk powdered sweetener, heavy cream, vanilla, and salt until smooth and pourable. Drizzle over cooled bread.
