Ingredients (Makes about 24 cookies)

  • 2 cups (200g) almond flour
  • ⅓ cup (35g) vanilla whey protein powder
  • ½ cup allulose or monk fruit sweetener
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup (115g) butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • ¾ cup sugar-free chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk almond flour, protein powder, sweetener, baking soda, and salt.
  3. In another bowl, cream the butter until smooth. Add egg and vanilla and mix well.
  4. Add the dry ingredients to the wet and mix until a dough forms. Fold in the chocolate chips.
  5. Scoop tablespoon-sized balls of dough onto the baking sheet and gently flatten.
  6. Bake for 10–12 minutes until the edges are golden. Let cool on the sheet for 5 minutes before transferring to a rack.
