Ingredients (Makes about 24 cookies)
- 2 cups (200g) almond flour
- ⅓ cup (35g) vanilla whey protein powder
- ½ cup allulose or monk fruit sweetener
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup (115g) butter, softened
- 1 large egg
- 1 tsp vanilla extract
- ¾ cup sugar-free chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, whisk almond flour, protein powder, sweetener, baking soda, and salt.
- In another bowl, cream the butter until smooth. Add egg and vanilla and mix well.
- Add the dry ingredients to the wet and mix until a dough forms. Fold in the chocolate chips.
- Scoop tablespoon-sized balls of dough onto the baking sheet and gently flatten.
- Bake for 10–12 minutes until the edges are golden. Let cool on the sheet for 5 minutes before transferring to a rack.
