Ingredients (Serves 4–6)

  • 2 lbs (900g) ground beef (80/20 or 85/15 for best flavor)
  • 1 large egg
  • ⅓ cup (35g) almond flour or crushed pork rinds
  • ¼ cup grated parmesan cheese
  • 2 garlic cloves, minced
  • 1 small onion, finely grated
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried Italian seasoning or fresh parsley
  • 1 medium head green cabbage, leaves separated
  • Olive oil or avocado oil for brushing
  • Optional: cheese slices for melting on top

Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment or foil.
  2. In a large bowl, gently mix ground beef, egg, almond flour/pork rinds, parmesan, garlic, onion, paprika, onion powder, salt, pepper, and Italian seasoning until just combined (do not overmix).
  3. Form into 6–8 patties. Place each patty on a large cabbage leaf on the baking sheet.
  4. Brush patties and cabbage lightly with oil. Season cabbage with a pinch of salt.
  5. Bake for 18–25 minutes until patties are browned and cooked through (internal temperature 160°F / 71°C). Optional: add cheese in the last 5 minutes.
