Ingredients (Serves 4–6)
- 2 lbs (900g) ground beef (80/20 or 85/15 for best flavor)
- 1 large egg
- ⅓ cup (35g) almond flour or crushed pork rinds
- ¼ cup grated parmesan cheese
- 2 garlic cloves, minced
- 1 small onion, finely grated
- 1 tsp smoked paprika
- 1 tsp onion powder
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp dried Italian seasoning or fresh parsley
- 1 medium head green cabbage, leaves separated
- Olive oil or avocado oil for brushing
- Optional: cheese slices for melting on top
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment or foil.
- In a large bowl, gently mix ground beef, egg, almond flour/pork rinds, parmesan, garlic, onion, paprika, onion powder, salt, pepper, and Italian seasoning until just combined (do not overmix).
- Form into 6–8 patties. Place each patty on a large cabbage leaf on the baking sheet.
- Brush patties and cabbage lightly with oil. Season cabbage with a pinch of salt.
- Bake for 18–25 minutes until patties are browned and cooked through (internal temperature 160°F / 71°C). Optional: add cheese in the last 5 minutes.
- Serve hot with extra herbs, sugar-free condiments, or as lettuce wraps.
