Ingredients (Makes 12–14 cookies)

  • 1½ cups (150g) almond flour
  • ⅓ cup (35g) vanilla whey protein powder
  • ⅓ cup allulose or monk fruit sweetener
  • ½ cup (113g) butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup (90g) chopped pecans + extra pecan halves for topping

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter and sweetener until light and fluffy.
  3. Add egg and vanilla extract, mixing well.
  4. Stir in almond flour, protein powder, baking soda, and salt until a soft dough forms.
  5. Fold in chopped pecans.
  6. Scoop rounded tablespoons of dough, roll into balls, and place on the baking sheet. Gently flatten slightly and press a pecan half on top of each.
  7. Bake for 10–14 minutes until edges are golden but centers are still soft.
  8. Cool on the baking sheet for 5–10 minutes before transferring to a wire rack.
