Ingredients (Makes 12–14 cookies)
- 1½ cups (150g) almond flour
- ⅓ cup (35g) vanilla whey protein powder
- ⅓ cup allulose or monk fruit sweetener
- ½ cup (113g) butter, softened
- 1 large egg
- 1 tsp vanilla extract
- ½ tsp baking soda
- ¼ tsp salt
- ¾ cup (90g) chopped pecans + extra pecan halves for topping
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together softened butter and sweetener until light and fluffy.
- Add egg and vanilla extract, mixing well.
- Stir in almond flour, protein powder, baking soda, and salt until a soft dough forms.
- Fold in chopped pecans.
- Scoop rounded tablespoons of dough, roll into balls, and place on the baking sheet. Gently flatten slightly and press a pecan half on top of each.
- Bake for 10–14 minutes until edges are golden but centers are still soft.
- Cool on the baking sheet for 5–10 minutes before transferring to a wire rack.
