High-Protein Keto Blueberry Cheesecake Parfait

Ingredients (Makes 4 parfaits)

Crust:

  • ½ cup (50g) almond flour
  • 2 tbsp butter, melted
  • 1 tbsp allulose or powdered sweetener

Cheesecake Filling:

  • 8 oz (225g) cream cheese, softened
  • 1 cup (240g) full-fat Greek yogurt
  • 1 scoop (30g) vanilla whey protein powder
  • ⅓ cup allulose or powdered sweetener
  • 1 tsp vanilla extract

Blueberry Topping:

  • 1½ cups fresh or frozen blueberries
  • 2 tbsp water
  • 1–2 tbsp allulose (to taste)
  • ½ tsp lemon juice

Instructions

  1. Mix almond flour, melted butter, and sweetener for the crust. Press a small amount into the bottom of 4 jars or glasses.
  2. Beat cream cheese until smooth. Add Greek yogurt, protein powder, sweetener, and vanilla. Mix until creamy.
  3. In a small pan, cook blueberries, water, sweetener, and lemon juice over medium heat for 5–7 minutes until thickened into a sauce. Cool slightly.
  4. Layer the cheesecake filling over the crust, add some fresh blueberries, more filling, and top with blueberry sauce and fresh blueberries.
  5. Chill for at least 30 minutes before serving.
