Ingredients (Makes 4 parfaits)
Crust:
- ½ cup (50g) almond flour
- 2 tbsp butter, melted
- 1 tbsp allulose or powdered sweetener
Cheesecake Filling:
- 8 oz (225g) cream cheese, softened
- 1 cup (240g) full-fat Greek yogurt
- 1 scoop (30g) vanilla whey protein powder
- ⅓ cup allulose or powdered sweetener
- 1 tsp vanilla extract
Blueberry Topping:
- 1½ cups fresh or frozen blueberries
- 2 tbsp water
- 1–2 tbsp allulose (to taste)
- ½ tsp lemon juice
Instructions
- Mix almond flour, melted butter, and sweetener for the crust. Press a small amount into the bottom of 4 jars or glasses.
- Beat cream cheese until smooth. Add Greek yogurt, protein powder, sweetener, and vanilla. Mix until creamy.
- In a small pan, cook blueberries, water, sweetener, and lemon juice over medium heat for 5–7 minutes until thickened into a sauce. Cool slightly.
- Layer the cheesecake filling over the crust, add some fresh blueberries, more filling, and top with blueberry sauce and fresh blueberries.
- Chill for at least 30 minutes before serving.
