High-Protein Keto Air Fryer Donuts

Ingredients (Makes 8 donuts)

  • 1½ cups (150g) almond flour
  • ⅓ cup (35g) vanilla whey protein powder
  • ⅓ cup allulose or monk fruit sweetener
  • 2 tsp baking powder
  • ¼ tsp salt
  • 2 large eggs
  • 3 tbsp butter or coconut oil, melted
  • ⅓ cup (80ml) unsweetened almond milk
  • 1 tsp vanilla extract

Sugar Coating:

  • ⅓ cup allulose or powdered erythritol
  • 1 tsp cinnamon (optional)
  • 2–3 tbsp melted butter (for brushing)

Instructions

  1. Preheat air fryer to 350°F (175°C) for 3 minutes.
  2. In a large bowl, whisk almond flour, protein powder, sweetener, baking powder, and salt.
  3. In another bowl, whisk eggs, melted butter, almond milk, and vanilla.
  4. Combine wet and dry ingredients and mix until a soft dough forms.
  5. Divide dough into 8 portions. Roll each into a ball, then flatten and poke a hole in the center to form a donut shape (or use a donut cutter).
  6. Place donuts on parchment paper in the air fryer basket (work in batches if needed).
  7. Air fry for 6–9 minutes until golden and cooked through.
  8. Brush warm donuts with melted butter, then coat in the sweetener (and cinnamon) mixture.
