These high-protein fluffy pancakes are light, golden, and filling enough for breakfast. Eggs, cottage cheese or Greek yogurt, and protein powder cook into a soft stack that still stays low-carb. Every serving delivers 28 g of protein and only 4 g net carbs.

Sugar-free, low-carb, and perfect for a fast weekday breakfast or weekend brunch.

Why you’ll love these pancakes

  • 28g protein per serving — a high-protein breakfast stack
  • Only 4g net carbs and fully sugar-free
  • Fluffy, golden, and not dry
  • Ready in about 15 minutes
  • Blender-friendly batter
  • Great with sugar-free syrup or berries

Health notes

  • High protein: Eggs, cottage cheese or Greek yogurt, and protein powder boost each serving.
  • Low carb: Almond flour keeps net carbs very low.
  • Sugar-free: No added sugar in the batter.
  • Quick breakfast: Mix and cook in one skillet.

Key element — don’t overmix or overheat

Blend just until smooth and cook on medium-low. High heat browns the outside before the center sets and can dry protein pancakes out.

Ingredients

Instructions

  1. Blend the batter. Add eggs, cottage cheese or yogurt, protein powder, almond flour, baking powder, sweetener, vanilla, and salt to a blender. Blend until smooth. Add a splash of milk only if the batter is too thick to pour.
  2. Rest. Let the batter sit 1–2 minutes so it thickens slightly.
  3. Heat the pan. Warm a nonstick skillet over medium-low heat and lightly grease it.
  4. Cook. Pour small pancakes (about 3–4 inches). Cook 1–2 minutes until bubbles form and the edges look set. Flip and cook 1 more minute until golden.
  5. Serve. Stack and top with sugar-free syrup and optional berries. This recipe makes about 6–8 small pancakes, or 2 servings.

Notes & Tips

  1. Keep the heat at medium-low so the pancakes stay fluffy instead of dry.
  2. Smaller pancakes flip more easily and cook more evenly.
  3. If the first pancake browns too fast, lower the heat.
  4. Don’t press them down with the spatula.
  5. These reheat well in a toaster or air fryer.

Frequently asked questions

Are these pancakes keto-friendly?

Yes. At only 4g net carbs per serving they fit most keto and low-carb plans.

Why are my pancakes dry?

The heat was too high or they cooked too long. Protein pancakes need medium-low heat and a quick flip.

Can I skip the protein powder?

Yes. Add a little extra almond flour. They will be lower in protein and slightly less fluffy.

Do I have to use a blender?

A blender gives the smoothest batter, but a food processor or vigorous whisking also works.

Can I freeze them?

Yes. Freeze cooked pancakes and reheat in a toaster or air fryer.

What protein powder works best?

A whey or whey-casein blend makes the fluffiest pancakes. Some plant proteins make the batter thicker and drier.
