- 1 cup (100g) almond flour
- ⅓ cup (35g) vanilla whey protein powder
- 2 tbsp allulose or monk fruit sweetener
- 1 tsp baking powder
- ¼ tsp salt
- 3 large eggs
- ½ cup full-fat Greek yogurt or cottage cheese
- 2 tbsp butter or coconut oil, melted
- 1 tsp vanilla extract
- 2–3 tbsp unsweetened almond milk (as needed for consistency)

Instructions
- In a large bowl, whisk almond flour, protein powder, sweetener, baking powder, and salt.
- In another bowl, whisk eggs, Greek yogurt/cottage cheese, melted butter, and vanilla until smooth.
- Combine wet and dry ingredients. Add almond milk a little at a time until you reach a thick but pourable batter.
- Heat a non-stick skillet or griddle over medium-low heat and lightly grease with butter.
