Ingredients (Serves 4)
- 1½–2 lbs ground beef or turkey (93% lean for higher protein)
- 1 medium head green cabbage, thinly sliced (about 8 cups)
- 2 medium carrots, julienned or shredded
- 4–5 green onions, sliced
- 4 garlic cloves, minced
- 1 tbsp fresh ginger, minced (or 1 tsp ground ginger)
- 3 tbsp soy sauce or coconut aminos
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- ½ tsp red pepper flakes (optional)
- Salt & black pepper to taste
- Sesame seeds and extra green onions for garnish
Instructions
- In a large skillet or wok over medium-high heat, cook ground meat until browned and crumbled (6–8 minutes). Drain excess fat if needed.
- Add garlic and ginger, cook 30–60 seconds until fragrant.
- Stir in sliced cabbage and carrots. Cook 5–7 minutes until cabbage begins to soften but still has some crunch.
- Add soy sauce/coconut aminos, sesame oil, rice vinegar, red pepper flakes, salt, and pepper. Stir well and cook another 2–3 minutes.
- Remove from heat, garnish with green onions and sesame seeds. Serve hot.
