Ingredients (Serves 4)

  • 1½–2 lbs ground beef or turkey (93% lean for higher protein)
  • 1 medium head green cabbage, thinly sliced (about 8 cups)
  • 2 medium carrots, julienned or shredded
  • 4–5 green onions, sliced
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, minced (or 1 tsp ground ginger)
  • 3 tbsp soy sauce or coconut aminos
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • ½ tsp red pepper flakes (optional)
  • Salt & black pepper to taste
  • Sesame seeds and extra green onions for garnish

Instructions

  1. In a large skillet or wok over medium-high heat, cook ground meat until browned and crumbled (6–8 minutes). Drain excess fat if needed.
  2. Add garlic and ginger, cook 30–60 seconds until fragrant.
  3. Stir in sliced cabbage and carrots. Cook 5–7 minutes until cabbage begins to soften but still has some crunch.
  4. Add soy sauce/coconut aminos, sesame oil, rice vinegar, red pepper flakes, salt, and pepper. Stir well and cook another 2–3 minutes.
  5. Remove from heat, garnish with green onions and sesame seeds. Serve hot.
