Ingredients (Serves 4)

  • 2 lbs (900g) chicken breasts or tenders, cut into strips
  • ½ cup (130g) mayonnaise or Greek yogurt
  • 1 cup (100g) grated parmesan cheese
  • ½ cup (50g) almond flour
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • Salt & pepper to taste
  • Olive oil spray (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Mix chicken strips with mayonnaise or Greek yogurt until coated.
  3. In another bowl, mix parmesan, almond flour, garlic powder, paprika, Italian seasoning, salt, and pepper.
  4. Coat each chicken strip in the breading mixture. Press firmly.
  5. Place on the baking sheet. Spray lightly with olive oil.
  6. Bake 20–25 minutes until golden and cooked through. Flip halfway for even crispiness.
