Ingredients (Serves 4)
- 2 lbs (900g) chicken breasts or tenders, cut into strips
- ½ cup (130g) mayonnaise or Greek yogurt
- 1 cup (100g) grated parmesan cheese
- ½ cup (50g) almond flour
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp Italian seasoning
- Salt & pepper to taste
- Olive oil spray (optional)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Mix chicken strips with mayonnaise or Greek yogurt until coated.
- In another bowl, mix parmesan, almond flour, garlic powder, paprika, Italian seasoning, salt, and pepper.
- Coat each chicken strip in the breading mixture. Press firmly.
- Place on the baking sheet. Spray lightly with olive oil.
- Bake 20–25 minutes until golden and cooked through. Flip halfway for even crispiness.
