Ingredients (Serves 4)
- 1½–2 lbs large shrimp, peeled and deveined
- 2 tbsp olive oil or butter
- 5 garlic cloves, minced
- 1 cup heavy whipping cream
- 4 oz (115g) cream cheese, softened
- ¾ cup grated Parmesan cheese
- 2–3 cups fresh spinach, chopped
- 1 cup cherry tomatoes, halved
- 1 tsp Italian seasoning
- ½ tsp red pepper flakes (optional)
- Salt & black pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet over medium heat, sauté garlic in oil/butter for 30 seconds until fragrant.
- Add heavy cream, cream cheese, Parmesan, Italian seasoning, red pepper flakes, salt, and pepper. Stir until smooth and creamy.
- Mix in spinach and tomatoes until spinach begins to wilt. Remove from heat.
- Place shrimp in a baking dish. Pour the creamy sauce evenly over the shrimp.
- Bake 15–20 minutes until shrimp are pink/opaque and sauce is bubbly.
- Garnish with fresh parsley and serve hot.
