Ingredients (Serves 4)

  • 1½–2 lbs large shrimp, peeled and deveined
  • 2 tbsp olive oil or butter
  • 5 garlic cloves, minced
  • 1 cup heavy whipping cream
  • 4 oz (115g) cream cheese, softened
  • ¾ cup grated Parmesan cheese
  • 2–3 cups fresh spinach, chopped
  • 1 cup cherry tomatoes, halved
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes (optional)
  • Salt & black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté garlic in oil/butter for 30 seconds until fragrant.
  3. Add heavy cream, cream cheese, Parmesan, Italian seasoning, red pepper flakes, salt, and pepper. Stir until smooth and creamy.
  4. Mix in spinach and tomatoes until spinach begins to wilt. Remove from heat.
  5. Place shrimp in a baking dish. Pour the creamy sauce evenly over the shrimp.
  6. Bake 15–20 minutes until shrimp are pink/opaque and sauce is bubbly.
  7. Garnish with fresh parsley and serve hot.
