Ingredients (Serves 4)
- 2 lbs boneless chicken thighs or breasts, cut into bite-sized pieces
- 2 tbsp olive oil or avocado oil
- 8 oz mushrooms, sliced
- 1 large green bell pepper, sliced
- 1 medium onion, sliced
- 4 garlic cloves, minced
- 1 tsp Italian seasoning or dried thyme
- ½ tsp smoked paprika
- Salt & black pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Heat oil in a large skillet over medium-high heat.
- Season chicken pieces with salt, pepper, Italian seasoning, and smoked paprika. Add to the skillet and cook 5–7 minutes until browned and mostly cooked through.
- Add sliced mushrooms, green pepper, onion, and garlic. Stir-fry for 6–8 minutes until vegetables are tender and chicken is fully cooked.
- Taste and adjust seasoning. Garnish with fresh parsley if desired.
