Ingredients (Serves 4)

  • 2 lbs boneless chicken thighs or breasts, cut into bite-sized pieces
  • 2 tbsp olive oil or avocado oil
  • 8 oz mushrooms, sliced
  • 1 large green bell pepper, sliced
  • 1 medium onion, sliced
  • 4 garlic cloves, minced
  • 1 tsp Italian seasoning or dried thyme
  • ½ tsp smoked paprika
  • Salt & black pepper to taste

Instructions

  2. Season chicken pieces with salt, pepper, Italian seasoning, and smoked paprika. Add to the skillet and cook 5–7 minutes until browned and mostly cooked through.
  3. Add sliced mushrooms, green pepper, onion, and garlic. Stir-fry for 6–8 minutes until vegetables are tender and chicken is fully cooked.
  4. Taste and adjust seasoning. Garnish with fresh parsley if desired.
