Ingredients (Serves 4)

  • 1.5 lbs (680g) chicken breast or thighs, cut into bite-sized pieces
  • 1 small head cabbage (or half large), thinly sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 2 tbsp avocado oil or sesame oil
  • 3 tbsp soy sauce or coconut aminos
  • 1 tbsp rice vinegar or lime juice
  • 1 tsp ginger (fresh or powder)
  • 1 tsp sesame seeds (optional)
  • Salt, pepper, and red pepper flakes to taste

Instructions

  1. Heat oil in a large skillet or wok over medium-high heat. Season chicken with salt and pepper. Cook chicken 5–7 minutes until browned and mostly cooked through. Remove and set aside.
  2. In the same skillet, add onion, bell peppers, and garlic. Stir-fry 2–3 minutes until slightly softened.
  3. Add sliced cabbage and cook 3–4 minutes until it starts to wilt but remains crisp.
