Ingredients (Serves 4)
- 1.5 lbs (680g) chicken breast or thighs, cut into bite-sized pieces
- 1 small head cabbage (or half large), thinly sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 2 tbsp avocado oil or sesame oil
- 3 tbsp soy sauce or coconut aminos
- 1 tbsp rice vinegar or lime juice
- 1 tsp ginger (fresh or powder)
- 1 tsp sesame seeds (optional)
- Salt, pepper, and red pepper flakes to taste
- Optional: green onions or cilantro for garnish
Instructions
- Heat oil in a large skillet or wok over medium-high heat. Season chicken with salt and pepper. Cook chicken 5–7 minutes until browned and mostly cooked through. Remove and set aside.
- In the same skillet, add onion, bell peppers, and garlic. Stir-fry 2–3 minutes until slightly softened.
- Add sliced cabbage and cook 3–4 minutes until it starts to wilt but remains crisp.
- Return chicken to the skillet. Add soy sauce/coconut aminos, vinegar, ginger, and red pepper flakes. Stir-fry 2–3 minutes until everything is well coated and heated through.
- Garnish with sesame seeds, green onions, or cilantro. Serve hot.
