Ingredients (Serves 6)

  • 1.5 lbs (680g) ground beef
  • 6–8 slices bacon, cooked and crumbled
  • 4 medium zucchini, sliced into rounds
  • 2–3 medium tomatoes, chopped
  • 1 small onion, diced
  • 3 cups (300g) shredded cheddar cheese (or mix with mozzarella)
  • 2 large eggs (optional, for binding)
  • 2 tsp Italian seasoning or dried herbs
  • 1 tsp garlic powder
  • Salt & pepper to taste
  • Optional: ½ cup grated parmesan for topping

Instructions

  1. Preheat oven to 375°F (190°C). Grease a large glass baking dish.
  2. In a skillet, cook ground beef with onion, garlic powder, salt, and pepper until browned. Drain excess fat.
  3. Arrange a layer of zucchini slices in the bottom of the baking dish. Top with some chopped tomatoes, cooked beef, bacon crumbles, and a sprinkle of cheese. Repeat layers, finishing with cheese, bacon, and herbs on top.
