- 2 lbs (900g) ground beef (80/20 or leaner for higher protein)
- 1 large head green cabbage (about 2–2.5 lbs), chopped
- 1 medium onion, diced
- 3–4 cloves garlic, minced
- 4 cups (1 liter) beef broth (low sodium)
- 1 (14.5 oz) can diced tomatoes (no sugar added)
- 2 medium carrots, sliced (optional, for color — keeps it low carb)
- 2 tbsp tomato paste
- 1 tsp smoked paprika
- 1 tsp dried oregano or Italian seasoning
- Salt & black pepper to taste
- Optional: 1–2 tbsp Worcestershire sauce, red pepper flakes for heat, fresh parsley for garnish
Instructions
- In a large pot or Dutch oven over medium-high heat, cook the ground beef until browned. Drain excess fat if needed, then add onion and garlic. Cook 3–4 minutes until fragrant.
