  • 2 lbs (900g) ground beef (80/20 or leaner for higher protein)
  • 1 large head green cabbage (about 2–2.5 lbs), chopped
  • 1 medium onion, diced
  • 3–4 cloves garlic, minced
  • 4 cups (1 liter) beef broth (low sodium)
  • 1 (14.5 oz) can diced tomatoes (no sugar added)
  • 2 medium carrots, sliced (optional, for color — keeps it low carb)
  • 2 tbsp tomato paste
  • 1 tsp smoked paprika
  • 1 tsp dried oregano or Italian seasoning
  • Salt & black pepper to taste

Instructions

  1. In a large pot or Dutch oven over medium-high heat, cook the ground beef until browned. Drain excess fat if needed, then add onion and garlic. Cook 3–4 minutes until fragrant.
