Halloween Flour-less Pumpkin Muffins

Jump to Recipe

Pumpkin puree, eggs, whey, and almond flour baked into orange muffins — ready in 25 minutes.

These are the Halloween muffins that stay on a low-carb plate. The crumb is pumpkin, not cake-mix orange. Almond flour keeps the wheat out. Eggs and whey are the protein. The white drip is a sugar-free cream cheese glaze, the same one running down the stack in the photo. One muffin is about 160 calories, 10g protein, and 3g net carbs. The stack of three is the picture, not the serving.

The top muffin has a bite taken out so you can see the crumb. It should be orange, open, and soft. The glaze should sink into the broken edge, not sit on it like icing. A plain white plate is enough. The small pumpkin and the checkered cloth are background, not ingredients.

Use canned pumpkin puree, not pie filling. Pie filling is already sweetened, and the sugar-free line fails. Glaze the muffins while they are warm so the drip sets in soft lines. Cold muffins leave it in a puddle on top. One teaspoon of spice is enough. A second teaspoon tastes like a candle.

Ingredients

Instructions

  1. Heat the oven to 350°F. Line 6 muffin cups.
  2. Whisk the pumpkin, eggs, whey, almond flour, granulated sweetener, butter, spice, vanilla, baking powder, and salt until thick and smooth.
  3. Divide between the cups, about three-quarters full. Bake 16 to 18 minutes, until the tops spring back and a pick comes out clean.
  4. Cool 5 minutes. Stir the cream cheese, powdered sweetener, milk, and vanilla into a thick glaze.
  5. Spoon the glaze over the warm muffins so it drips down the sides. One muffin is a serving.

Notes & Tips

  1. Pumpkin puree only. Pie filling blows the carbs and the sugar-free claim.
  2. Do not thin the batter. A loose batter bakes flat, not the domed crumb in the photo.
  3. Glaze while warm. Powdered sweetener in the glaze, or the white top stays gritty.
  4. No whey: use 1/2 cup blended low-fat cottage cheese. The crumb is a little denser.
  5. Best the day they are baked. Fridge, covered, up to 4 days. Freeze unglazed.
  6. Per muffin, with glaze, estimate: 160 calories, 10g protein, 3g net carbs, 11g fat.
