Cocktail sausages under a mozzarella dough — ready in 15 minutes.

These are the ghosts on the plate. A sausage stands up, the dough drapes over it like a sheet, and a straw pokes two eyes and a mouth before the bake. The dough goes on pale and comes out gold at the hem, the same way the finished plate looks. One ghost is about 220 calories, 12g protein, and 8g net carbs. Six on the plate is the picture, not the serving.

Use cocktail sausages, not full hot dogs. A full dog is too tall for the drape in the photo, and the face ends up on the side. The dough is mozzarella and almond flour, not crescent-roll dough. Crescent dough is wheat and sugar, and it misses the card. It should stretch without tearing. If it tears over the sausage, press it back together. A hole bakes as a bare spot, not a ghost.

Poke the face before the oven, with a straw, as in the photo. After the bake the dough is set and the mouth closes. Fifteen minutes covers the melt, the drape, and the bake.

Ingredients

Instructions

  1. Heat the oven to 400°F. Line a sheet pan.
  2. Stand the sausages upright on the pan, with a little space between them.
  3. Melt the mozzarella and cream cheese until smooth. Stir in the egg yolk and almond flour. It should stretch, not crumble.
  4. Divide into 8 pieces. Drape one piece over each sausage so it hangs like a sheet and pools at the base.
  5. Poke two eyes and a small mouth with a straw.
  6. Bake 6 to 7 minutes, until the hem is gold and the top is set. One ghost is a serving.

Notes & Tips

  1. Cocktail sausages, not full hot dogs. A full dog is too tall for the drape.
  2. Mozzarella dough, not crescent dough. Crescent dough misses the card.
  3. Poke the face before the bake. After, the mouth closes.
  4. If the dough tears, press it shut. A hole bakes as a bare sausage.
  5. Best the minute they come out. The drape stiffens as it cools.
  6. Fridge, covered, up to 3 days. Reheat in a pan so the hem crisps again.
  7. Per ghost, estimate: 220 calories, 12g protein, 8g net carbs, 16g fat.
