Garlic Parmesan Chicken Meatloaves

These mini chicken meatloaves are packed with flavor, super tender, and perfect for a diabetic-friendly, low-carb dinner. You get all the comfort of classic meatloaf—without the heavy carbs!


🥣 Ingredients

  • 1 lb ground chicken
  • ½ cup grated parmesan cheese
  • ¼ cup almond flour (low-carb binder)
  • 1 egg
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 tbsp chopped parsley
  • 2 tbsp olive oil or melted butter

👩‍🍳 Instructions

1️⃣ Preheat

  • Oven to 375°F (190°C)
  • Line a baking sheet or use a muffin tin

2️⃣ Mix

In a bowl combine:

  • Ground chicken
  • Parmesan
  • Almond flour
  • Egg
  • Garlic & seasonings

Mix until just combined (don’t overmix).


3️⃣ Shape

  • Form into small loaves (or fill muffin cups)
  • Place on baking tray

4️⃣ Bake

  • Bake 20–25 minutes
  • Internal temp: 165°F (74°C)

5️⃣ Finish (Optional but 🔥)

  • Brush with melted butter + garlic
  • Broil 2–3 minutes for a golden cheesy top
