This is the pan I make when I want something hot and savory and I do not want meat in it. Cauliflower and mushrooms share a skillet, get enough room to brown, then take garlic and parsley at the end. The edges go gold, the centers stay tender, and the pan looks like the photo: florets, thick mushroom slices, black pepper, green herbs. Olive oil is the only fat.

It fits the Mediterranean side of the series because there is nothing else hiding in the sauce. No cream, no breading. Garlic goes in after the browning, so it smells sweet instead of bitter. If the pan is crowded, the cauliflower steams and stays pale. Two batches are faster than one wet pan. A splash of lemon at the end brightens it without turning it into a lemon dish.

I serve it from the skillet, fork in the pan, the way the photo is shot. It feeds four as a side and two as a light plate with an egg or a can of chickpeas stirred in. Leftovers are good cold on a salad, or warmed in the same pan the next day.

  1. Pat the mushrooms dry. Heat 1 Tbsp olive oil in a wide skillet over medium-high.
  2. Add the mushrooms in one layer. Cook 4 minutes without stirring, until the undersides are brown. Toss once and cook 1 minute more. Move them to a plate.
  3. Add the second tablespoon of oil and the cauliflower. Season with salt and pepper. Cook 6 to 8 minutes, turning a few times, until the edges are spotted gold and a fork meets a little resistance.
  4. Return the mushrooms. Add the garlic and stir 30 seconds, until it smells sweet.
  5. Take the pan off the heat. Fold in the parsley and lemon juice. Taste and add a pinch more salt if it needs it. Serve from the skillet.

Notes & Tips

  1. Dry mushrooms brown. Wet ones steam and shrink without color.
  2. Thick slices, like the photo. Paper-thin slices disappear.
  3. Garlic last. It burns if it starts with the cauliflower.
  4. A wide pan matters more than the heat. Crowding is what keeps it pale.
