This is the skillet I make when I want a sauce on the plate and still need dinner in 25 minutes. Chicken thighs get a hard sear so the skin, or the top of a boneless thigh, goes deep gold. Mushrooms take the same pan, garlic goes in once the browning is done, and a short splash of broth and cream turns the stuck bits into the sauce you see around the plate. Parsley and black pepper finish it. No oven, no separate gravy.

The sauce should look loose, not like a thick paste. Cream clings to the mushrooms, and the pan juices keep it from tasting flat. Bone-in thighs need the full time. Boneless thighs are done a few minutes sooner, which is useful if the evening is already running late. Either one works on this plate.

I serve it the way the photo is plated: two thighs in the middle, mushrooms and sauce around them, parsley over the top. It feeds four if you add rice, mashed potatoes, or a pile of greens. On its own it is a generous two-to-three person skillet. Leftovers thicken in the fridge, so loosen them with a spoon of water when you reheat.

Instructions

  1. Pat the thighs dry. Season both sides with salt, pepper, and garlic powder.
  2. Heat the oil in a wide skillet over medium-high. Add the thighs skin-side down. Sear 5 to 6 minutes without moving them, until the skin is deep gold. Flip and cook 3 minutes. Move them to a plate.
  3. Add the mushrooms to the same skillet. Cook 4 minutes, until they take on color and give up their water. Push them aside and add the garlic. Stir 30 seconds.
  4. Pour in the broth and scrape the browned bits off the pan. Stir in the cream, salt, pepper, and Dijon if you are using it. Simmer 1 minute until the sauce looks lightly glossy.
  5. Nestle the thighs back in, skin-side up. Simmer 6 to 8 minutes for bone-in, 4 to 5 for boneless, until the thickest part reads 165 F (74 C) and the sauce coats a spoon.
  6. Rest 2 minutes in the pan. Spoon the mushrooms and sauce around the chicken and finish with parsley.

Notes & Tips

  1. Dry the chicken. Wet skin will not go gold in 5 minutes.
  2. Do not crowd the pan. Four thighs in a 12-inch skillet is the limit.
  3. Mushrooms first, garlic second. Garlic burns if it sits in a dry hot pan.
  4. If the sauce looks thin, simmer 1 minute with the chicken on a plate. If it looks pasty, splash in broth.

  • No mushrooms: use 1 cup halved cherry tomatoes and cook them 2 minutes.
  • Dairy-free: swap the cream for full-fat coconut milk. The sauce will taste slightly sweet.
