Diabetic-Friendly Strawberry Banana Pudding Cookies

🍪 Ingredients (Makes 16–18 cookies)

For the Cookies

  • 1 ½ cups almond flour
  • ⅓ cup coconut flour
  • ½ cup softened butter
  • ½ cup granulated sugar substitute
    (allulose or monk fruit with erythritol blend)
  • 1 egg
  • 1 tsp banana extract
  • ½ tsp vanilla extract
  • ½ tsp baking powder
  • Pinch of salt
  • ¼ cup freeze-dried strawberries, crushed into a powder
  • 1–2 tsp warm water (to make strawberry “swirl paste”)

For the Cheesecake Dip

  • 4 oz cream cheese, softened
  • 2 tbsp Greek yogurt or heavy cream
  • 2–3 tbsp powdered sweetener
  • ½ tsp vanilla extract
  • Optional: 1 tbsp crushed freeze-dried strawberries

1️⃣ Make the strawberry swirl

In a small bowl:

  • Mix crushed freeze-dried strawberries with 1–2 tsp warm water until thick and spreadable.
    Set aside.

2️⃣ Make the cookie dough

Beat together:

  • softened butter
  • sweetener

Mix until fluffy. Add egg, banana extract, and vanilla.

3️⃣ Add dry ingredients

Stir in:

  • almond flour
  • coconut flour
  • baking powder
  • salt

Dough will be soft but should not be sticky. Chill 10–15 minutes if needed.

4️⃣ Shape and swirl

  • Scoop dough into balls and flatten slightly.
  • Spread a tiny amount of strawberry paste on top.

5️⃣ Bake
