Lemon mousse (2 glasses)
- 1 cup full-fat cottage cheese
- 1 scoop (about 30g) vanilla or lemon whey protein
- 2 Tbsp heavy cream
- 2 Tbsp powdered allulose
- 1 tsp lemon zest + 1 Tbsp lemon juice
- 1/2 tsp vanilla extract
- Pinch of salt
Blueberry swirl
- 1/3 cup blueberries
- 1 tsp powdered allulose
- 1 tsp lemon juice
Top
- 6 fresh blueberries
- 1 Tbsp sliced almonds, toasted
Swaps
- Greek yogurt: Same amount, extra thick. Tangier. Drain if it is watery.
- No whey: Skip it. Protein drops. Add 1 extra Tbsp cream so it still piles.
- Frozen blueberries: Fine for the swirl. Thaw, then mash. Fresh berries still go on top.
- Sugar jam: Skip it. That is how carbs jump.
Instructions
