  • 1 tsp vanilla extract

Instructions

  2. Separate eggs. Beat egg whites until soft peaks form.
  3. In another bowl, whisk egg yolks with sweetener until pale and creamy.
  4. Add almond milk, vanilla, salt, and honey (if using).
  5. Gently fold in almond flour until smooth.
  6. Carefully fold egg whites into batter in batches, keeping it airy.
  7. Fill cupcake liners about ¾ full.
  8. Bake 18–22 minutes, until tops are lightly golden and spring back when touched.
  9. Cool completely before serving.
