This recipe brings all the nostalgia of traditional meatloaf — rich beef, tender veggies, a savory-sweet glaze — but without the carb-heavy breadcrumbs or sugary ketchup. Every slice is moist, cheesy, and incredibly satisfying.
⭐ Ingredients (Serves 8)
Meatloaf
- 1 ½ lbs lean ground beef
- 1 egg
- 1 small onion, finely diced
- 1 small green pepper, finely diced
- 1 cup shredded cheddar cheese
- ⅓ cup almond flour (binder)
- 2 tbsp sugar-free ketchup
- 1 tbsp Worcestershire sauce
- 1 tsp garlic powder
- 1 tsp salt
- ½ tsp black pepper
Sugar-Free Glaze
- ¼ cup sugar-free ketchup
- 1 tbsp sugar-free brown sweetener (Swerve Brown or similar)
- ½ tsp mustard (optional)
🥣 Instructions
1. Preheat the oven
Set your oven to 350°F (175°C).
2. Mix your meatloaf base
In a large bowl, combine:
ground beef, egg, onion, green pepper, cheddar, almond flour, ketchup, Worcestershire, and spices.
Use your hands to mix just until combined — don’t overwork it.
3. Shape and pan it
Form into a loaf shape and place in a greased loaf pan or on a baking sheet lined with foil.
4. Add that glossy glaze
Stir together the sugar-free ketchup, brown sweetener, and mustard.
Brush half over the meatloaf.
5. Bake
Bake 45 minutes, remove and add the remaining glaze, then bake another 15 minutes or until internal temp reaches 160°F.
6. Rest before slicing
Let it sit for 10 minutes so the juices settle and slices hold together beautifully.
