🛒 Ingredients
- 2 cups cooked broccoli florets, chopped small
- 1 cup shredded mozzarella cheese
- ½ cup shredded cheddar (optional but delicious!)
- 1 large egg
- ¼ cup almond flour (or crushed pork rinds for extra crispiness)
- ¼ tsp garlic powder
- ¼ tsp onion powder
- Salt & pepper to taste
- Optional coating for extra crunch:
- Additional almond flour OR crushed pork rinds
- Optional dipping sauces: ranch, sugar-free marinara, garlic aioli
👩🍳 Instructions
1️⃣ Prep the Broccoli
Steam or microwave broccoli until tender. Chop finely and allow to cool slightly.
2️⃣ Mix the Filling
In a bowl, combine:
✔ chopped broccoli
✔ mozzarella (and cheddar if using)
✔ egg
✔ almond flour
✔ seasonings
Mix until it forms a sticky dough.
3️⃣ Shape Into Bites
Scoop out about a tablespoon of mixture and roll into small balls.
For extra crunch, roll each ball lightly in almond flour or crushed pork rinds.
4️⃣ Cook to Crispy Perfection
Choose your cooking method:
🔥 Pan-Fry:
Heat a little oil over medium heat. Fry bites until golden on all sides (about 2–3 minutes per side).
💨 Air Fry (low-carb favorite!):
Air fry at 400°F (200°C) for 8–10 minutes, shaking halfway.
🔥 Bake:
Bake at 400°F (200°C) for 15–18 minutes.
5️⃣ Serve Hot & Melty
Enjoy while warm so the cheese stays deliciously gooey. Serve with your favorite low-carb dip!
