Crispy Air-Fried Cauliflower Bites
Gold crust, tender inside, dip on the side – 20 minutes, one basket
These are breaded florets, not steamed cauliflower. Egg, almond flour, and Parmesan bake into a gold crust while the inside stays white and tender, like the cut piece in the photo. Twenty minutes. Sauce stays in the ramekin so the crust stays crisp.
Four servings. Dry the florets first or the breading slides off.
Why you’ll love these bites
- 7g protein per serving – a snack that is not empty
- Only 5g net carbs – almond flour, not wheat crumbs
- About 20 minutes, one air fryer
- Gold crust, white inside, like the photo
- No deep fryer, no sugar sauce
- They disappear as an appetizer
Health notes
- Low carb: Cauliflower plus almond flour and Parmesan. No wheat crumbs.
- Protein: Egg wash and cheese in the crust.
- Four servings: Macros are per plate, not the whole head.
- Sweet chili or sugary buffalo will jump the carbs. Keep the dip sugar-free.
Key element – dry the florets, space the basket, flip once
Wet cauliflower steams and the crust slides off. Pat dry, then egg, then almond-Parmesan. Do not crowd the basket. Flip at 6 minutes so both sides go gold, like the photo. Sauce on the side, not tossed, or the crust goes soggy.
Ingredients
Bites (4 servings)
- 1 medium head cauliflower, cut into bite-size florets
- 2 large eggs, beaten
- 3/4 cup almond flour
- 1/3 cup grated Parmesan
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp salt + 1/2 tsp black pepper
- Spray oil
- Chopped parsley, to finish
Dip (optional)
- 1/4 cup mayonnaise
- 1 Tbsp sugar-free hot sauce or buffalo
- 1/2 tsp paprika
- Pinch of salt
Swaps
- Pork rind crumbs: Swap half the almond flour. Extra crunch.
- Oven: 425 F (220 C) for 18 to 20 minutes, flip once.
- Ranch dip: Mix mayo, a splash of pickle juice, garlic powder, and dill.
- Wheat crumbs: Skip them. They jump the carbs.
Instructions
| 1 | Dry. Cut florets to even bites. Pat very dry with a towel. Wet cauliflower will not hold a crust. |
| 2 | Coat. Mix almond flour, Parmesan, garlic, paprika, salt, and pepper. Dip each floret in egg, then in the dry mix. Press so it sticks. |
| 3 | Basket. Heat the air fryer to 400 F (200 C). Spray the basket. Set florets in a single layer. Do not stack. Spray the tops. |
| 4 | Air fry. Cook 12 minutes, flip at 6. They should be gold with a white inside, like the cut floret in the photo. Work in batches if needed. |
| 5 | Serve. Pile on a plate. Parsley. Stir the dip. Keep sauce in a ramekin so the crust stays crisp. Four servings. |
Pro tips
- Pat the florets dry. Water is the number-one reason the breading slides off.
- Even sizes. Tiny bits burn while big ones stay raw in the center.
- Single layer. A crowded basket steams, and you lose the gold crust.
- Spray oil on the coated florets. That is how they brown, like the photo.
- Sauce on the side. Tossed sauce turns the crust soggy in minutes.
