🌿 Ingredients

For the gnocchi & veggies:

  • 1 lb (450 g) vegan gnocchi
  • 1 tbsp olive oil or vegan butter
  • 2 cups mushrooms, sliced (cremini or button work great)
  • 2 cups baby spinach
  • 3 cloves garlic, minced
  • Salt & pepper to taste

For the creamy sauce:

  • 1 cup raw cashews, soaked in hot water for 15 minutes
  • ¾ cup unsweetened plant milk
  • 1 tbsp nutritional yeast
  • 1 tbsp lemon juice
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • Pinch of red pepper flakes (optional but delicious!)

👩‍🍳 Instructions

1️⃣ Cook the gnocchi:
Boil in salted water until they float (about 2–3 minutes). Drain and set aside.

2️⃣ Make the sauce:
Blend soaked cashews, plant milk, nutritional yeast, lemon juice, onion powder, garlic powder, and salt until creamy and smooth. Set aside.

3️⃣ Sauté the mushrooms:
In a large pan, heat olive oil and add mushrooms. Cook until browned (about 5–7 minutes), then add minced garlic and cook for another 30 seconds.

4️⃣ Add spinach & sauce:
Toss in the spinach and let it wilt. Pour in the cashew sauce and stir until creamy and heated through.

5️⃣ Combine & serve:
Add the cooked gnocchi, stir to coat everything in that luscious sauce, and sprinkle with black pepper and red chili flakes.
