Creamy Ham and Potato Soup
Creamy Ham and Potato Soup
There are few dishes more comforting than a bowl of creamy ham and potato soup. This version is rich without being heavy, thick with tender potatoes, sweet corn, and generous cubes of smoky ham. It is the kind of soup that fills the kitchen with the most wonderful aroma and brings everyone to the table without being asked.
I developed this recipe out of necessity after holidays, when leftover ham always seemed to linger in the refrigerator. What began as a practical way to use leftovers quickly became one of the most requested meals in our house. It is simple enough for a weeknight yet special enough for company.
The secret lies in building flavor slowly: sautéing the vegetables until sweet, cooking the flour just long enough, and finishing with cream only at the end so the soup stays silky. The result is a bowl that tastes like it simmered all afternoon, even though it comes together in about 40 minutes.
Why This Recipe Works
This soup succeeds because every element has a purpose. The combination of onion, carrot, and celery creates a classic flavor base. Yukon Gold potatoes release just enough starch to thicken the broth naturally while still holding their shape. The ham adds salt and depth, and a measured amount of cream at the finish brings everything together into a luxurious but balanced bowl.
It is also practical. The entire recipe happens in one pot, it reheats beautifully, and it freezes well. Whether you are using leftover holiday ham or a ham steak from the store, the result is consistently excellent.
Creamy Ham and Potato Soup
Prep Time: 15 minutes | Cook Time: 25 minutes | Total Time: 40 minutes | Servings: 6
Ingredients
- 3 tablespoons unsalted butter
- 1 medium yellow onion, finely diced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- ¼ cup all-purpose flour
- 4 cups low-sodium chicken broth
- 1½ pounds Yukon Gold potatoes, peeled and cut into ½-inch cubes
- 2 cups cooked ham, cut into ½-inch cubes
- 1 cup corn kernels (frozen or canned and drained)
- 1 cup heavy cream
- 1 teaspoon dried thyme (or 1 tablespoon fresh)
- ½ teaspoon freshly ground black pepper, plus more to taste
- Kosher salt to taste
- Fresh thyme or parsley, for serving
Instructions
- Melt the butter in a large Dutch oven or heavy pot over medium heat. Add the onion, carrots, and celery. Cook, stirring occasionally, until the vegetables have softened and the onion is translucent, about 5 to 6 minutes.
- Add the garlic and cook for 30 seconds, until fragrant.
- Sprinkle the flour over the vegetables and cook, stirring constantly, for 1 full minute to cook out the raw flour taste.
- Gradually pour in the chicken broth while stirring, scraping up any bits from the bottom of the pot. Bring the mixture to a gentle simmer.
- Add the potatoes, ham, corn, thyme, and black pepper. Stir to combine. Cover and simmer for 15 to 18 minutes, until the potatoes are tender when pierced with a fork.
- Reduce the heat to low. Stir in the heavy cream and heat through for 2 to 3 minutes. Do not allow the soup to boil after adding the cream.
- Taste and season with salt and additional pepper as needed. For a thicker consistency, gently mash a few potato pieces against the side of the pot.
- Ladle into bowls and garnish with fresh thyme or parsley. Serve hot.
Notes
- For a lighter version, substitute half-and-half or whole milk for the heavy cream.
- The soup thickens as it sits. Add a splash of broth or milk when reheating.
- Leftovers keep well in the refrigerator for up to 4 days and freeze for up to 3 months.
- Yukon Gold potatoes are preferred for their creamy texture and ability to hold their shape.
Make It Your Own
For extra richness, stir in a handful of sharp white cheddar just before serving. A pinch of cayenne or a few dashes of hot sauce adds pleasant warmth. The soup is also excellent with a side of crusty bread, soft dinner rolls, or simple cornbread.
Frequently Asked Questions
Can this soup be made in a slow cooker?
Yes. Sauté the vegetables and garlic first, then transfer everything except the cream to the slow cooker. Cook on low for 6 to 7 hours. Stir in the cream during the final 20 minutes.
Does this soup freeze well?
It freezes very well. Cool completely, portion into airtight containers, and freeze for up to 3 months. Thaw overnight in the refrigerator and reheat gently on the stovetop.
What potatoes are best?
Yukon Gold potatoes are ideal. They hold their shape while contributing natural creaminess. Russets may be used but will break down more.
