For the Coffee Layer:

  • 1 ½ cups strong brewed espresso or dark coffee
  • 2 tbsp maple syrup or sugar
  • Optional: 1 tbsp rum or Kahlúa (vegan-friendly)

For the Layers:

  • Vegan ladyfingers (or vanilla sponge cake slices)
  • Unsweetened cocoa powder for dusting

👩‍🍳 Instructions

1️⃣ Prepare the coffee dip

Brew strong espresso and mix with maple syrup. Set aside to cool.


2️⃣ Make the creamy filling

In a mixing bowl, whip the coconut cream until light and fluffy.
Add vegan mascarpone, powdered sugar, and vanilla.
Beat until velvety-smooth.


3️⃣ Soak the ladyfingers

Quickly dip each ladyfinger (don’t oversoak!) into the cooled espresso mixture.
Lay them in the bottom of your dish to form a full first layer.


4️⃣ Add the cream layer

Spread half of the mascarpone cream over the soaked ladyfingers.
Repeat with another coffee-soaked layer and the remaining cream.


5️⃣ Chill & dust

Refrigerate for at least 4 hours (overnight is best for rich flavor).
Dust generously with cocoa powder just before serving.
