🧾 Ingredients

Protein & Base

  • 1 lb ground beef (or turkey for lighter calories)
  • 1 tbsp olive oil (if meat is very lean)
  • 1 medium onion, diced
  • 2–3 cloves garlic, minced

Veggies (low-carb, diabetes-friendly)

  • 1 cup celery, chopped
  • 1 cup carrots, chopped (optional; adds minimal carbs when portioned)
  • 1 cup chopped tomatoes (or 1 can Rotel, drained)
  • 4 cups beef broth

Seasonings

  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • ½ tsp oregano
  • Salt & pepper to taste

Creamy & Cheesy Add-Ins

  • 4 oz cream cheese (reduced-fat works fine)
  • ½–1 cup shredded cheddar
  • ¼ cup heavy cream (or half & half for lighter carbs)

Garnishes

  • Chopped cilantro
  • Green onions
  • Dollop of sour cream

🍳 Instructions

1. Brown the Meat

In a large pot, cook ground beef with onions until browned. Drain excess fat if needed.

2. Add Veggies

Stir in celery, carrots (if using), tomatoes, and garlic. Sauté 3–4 minutes until softened.

3. Season It

Add chili powder, cumin, paprika, oregano, salt, and pepper. Toast spices gently for a deeper flavor.

4. Simmer

Pour in beef broth. Bring to a boil, then lower heat and let simmer 15–20 minutes.

5. Make It Creamy

Reduce heat to low. Stir in cream cheese until melted. Then add cheddar and heavy cream.
Simmer lightly until silky and thickened.

6. Serve

Top each bowl with sour cream, cilantro, and green onions. ✨

💡 Diabetic-Friendly Tips

✔ Keep carbs steady

  • Carrots are optional; soup stays very low-carb without them.
  • Tomatoes add flavor but keep them moderate (½–1 cup).

✔ Add fiber to improve glucose response

A tablespoon of chia seeds or hemp hearts stirred in works beautifully.

✔ Protein first

This soup is high-protein, which helps reduce blood sugar spikes and keeps you full longer.
