  • 1 medium onion, diced
  • 4–5 garlic cloves, minced
  • 1 large head cauliflower (about 6–7 cups florets), cut into small pieces

  • 2 cups shredded cheddar cheese (plus extra for topping)
  • 2 tbsp butter
  • 1 tsp Italian seasoning

Instructions

  1. In a large skillet over medium heat, cook the ground beef with the diced onion until the beef is browned and the onion is softened. Drain excess fat if needed. Add minced garlic and cook for 1 more minute.

  3. Add cauliflower florets, beef broth, Italian seasoning, smoked paprika, salt, and pepper. Stir to combine.
