🧅🥕 Ingredients

(Serves 6–8)

  • ½ large head cabbage, chopped
  • 3 carrots, sliced
  • 2–3 celery stalks, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can (14 oz) diced tomatoes
  • 6 cups low-sodium broth (or water)
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • Salt & pepper to taste
  • Optional: sliced zucchini, green beans, spinach, or hot sauce

🍲 Instructions

1. Sauté the aromatics

In a large pot, sauté onion and garlic until fragrant.

2. Add the veggies

Stir in carrots, celery, bell pepper, and cabbage.

3. Pour in broth + tomatoes

Bring everything to a boil.

4. Season & simmer

Add paprika, pepper, and Italian seasoning.
